COCONUT BURFI | THENGAI BURFI
COCONUT BURFI - A very quick and simple sweet to prepare, made with freshly grated coconut, roasted gram and sugar.It is quite delicate in taste and keeps well in the fridge up to a month.
Yields : 12- 14 pieces
Preparation time : 15 minutes
Cooking time : 30 - 45 minutes

For this recipe you need
- 1 cup of freshly grated coconut
- 1 cup of roasted gram | pottukadalai powder
- 2 cups of sugar
- 2 - 3 tbsp. of ghee
- 1/2 tsp. of cardamom powder
- 1 - 2 tbsp. of chopped nuts ( badam and pista) - optional
Preparation
Place a pan over low heat and fry the shredded coconut gently
Combine the sugar and water in heavy-based pan . When the sugar melts and starts boiling, simmer for 5-7 minutes to make a thick sugar syrup.
Now add the fried shredded coconut, roasted gram powder and stir it well, until well blended.
Add ghee and cardamom powder.
Stir constantly, until the mixture becomes thick and starts leaving the sides of the pan. Grease a plate with little ghee. Pour the mixture on the greased plate.
Sprinkle some chopped nuts on top and flatten the surface evenly. Allow it to cool, then slice into desired shapes. Serve cold.
